87 505 Turbo Sedan questions

I have some questions concerning my 505 Turbo

1. Ideal coolant temp? What thermostat do you all recommend??
My gauge fluxuates from the lower white line to just about the 2nd white line

2. Ideal oil temp?
Gauge reads from the 2nd white line on left to 4th from left

3. I occasional get a roaring sound instead of a whining sound from turbo, this usually happens when car
is running on the hotter side. Is the turbo on its last lags?

4. Finally, a slight knock is coming from the lower engine area....any ideas?? bearing going out?

what you all say will guide me, as I have a complete rebuilt engine waiting in my garage.
